The following recipe was sent to me by my friend Paloma. Who doesn't love egg rolls?!! I will make sure to post pics of ingredients below:
OK, here is what you need:
1 head cabbage (small) - shredded
1 pound smoked or fried tofu (shredded) OR 1 pound ground chicken or pork
1/2 cup fish sauce
2 eggs
1 tablespoon white pepper
1 bunch cilantro - chopped
1 package of Bean Thread noodles - soaked in cold water, drained and cut with scissors. Make SURE the ingredients are beans. Vermicelli is used in both rice and bean noodles, so be sure you have bean noodles. We are not talking a tiny package, the package should be about 12-16 oz.
1 package of this soaked in cold water and drained (Woodear Fungus or Black Fungus). Buy it cut, it makes life so much easier.
Now, mix everything.
Get 2-3 packages (25 sheets each) of ONLY this brand Twin Dragon eggroll wrapper
Now, wrap according to directions in the back of the package. Leave the watery stuff/juice from the filling behind. Do not use!
Now, fry them in oil and serve piping hot.
Dip them with this sauce "sweet chili sauce" - there are lots of brands, they all taste pretty much the same
